My original resolutions were very cliche': The first was to get healthy. The second was to save money.
Packing my lunch for work will kill two resolutions with one stone. It means fewer fast food runs with my coworkers, which in turn means healthier eating and keeping more money in my wallet. Oh, and bringing lunch will give me more time left in my lunch hour to take a quick walk around campus. My coworkers (I'll call them Ms. Alabama and 58Wings from now on) will be joining me in my quest for a healthier 2009. Ms. Alabama and I were into Bentos last year, but we got lazy and didn't keep it up. Maybe this year we can get back into it.
I packed my first lunch today: Spicy Thai tuna sandwich on whole wheat bread, hard boiled pig and cow eggs* and 2 baklava bites. Sounds good, huh? It was.
*No, I didn't find any mystical egg-laying cows and pigs...I molded hard boiled eggs into cow and pig shapes using ice cream sandwich molds like these. You just pop them into these molds while still warm and voila! After letting them cool they look like this:
I got the idea from my favorite bento site, LunchInABox They were almost way to cute to eat. But I ate them. They were good.
